It's very possible that Souichi is 100% just being self-absorbed. In fact, that might be the best interpretation of this oneshot. But I can't help but feel that Souichi's actions might've been motivated by a genuine love for feir grandfather and an unwillingness to let feir grandfather go. The story does indeed have some creepy moments to it, but unfortunately the creepiest moment (the lunging) doesn't really have a good explanation for why it happened. I thought the reactions of the people in the funeral procession were funny and the near normalization of the zombification was a good way to end the story, in my opinion.
