Besides the series I listed below, which are mostly not extremely long series, I will also suggest adding Fairy Tail, which, although longer than the others, has many of the elements you said you like in an anime...
Can't have you running out of anime to watch! So, anime recommendations: I took a look at your Want To Watch list and you only have three titles listed! My WtW list just keeps growing and growing... it is hard to imagine someone with so short a list! Always sooo much anime to see and never nearly enough time to watch it all!

You don't reallly give me much to work with as to your likes and dislikes - you don't list favorite and least favorite genres here.

So, am hesitatingly recommending InuYasha from your WtW list. This is the anime that started it all for me, the one that got me into anime! The character backstories, the setup, all rich and interesting. I couldn't WAIT to find out more about Miroku and his curse, Sesshoumaru's history, Kikyo's fate... Sadly, it does not live up to it's full potential, so if you watch it, be sure to also watch The Final Act to get some resolution to the story.

And just curious, why do you list Naruto and Bleach as Won't Watch? I know these are high on anime snobs Avoid Like The Plague lists, but I personally don't agree. There is a lot of time spent on "filler" material (like the Bount story arc in Bleach) but some of that stuff is interesting even if it didn't come from the original manga storyline. And yes, they both do suffer from pacing problems from time to time, where the plot and action slows waaaay down, but I think that happens in just about EVERY long running series.

Because these series are long-running, they can provide lots and lots of entertainment when you have nothing else that you are currently watching. If you are ok with shounen-type adventures. You've seen and rated highly Rurouni Kenshin and Yu Yu Hakusho, so you should be ok with shounen adventures...

OK, on to other recommendations:

Perhaps try Trigun? Think Kenshin in the future with guns. Vash the Stampede is a loveable goofball of a hero, and this anime has a lot of comedy to back up its deeper underlying message of peace.

Or Tengen Toppa Gurren Lagann? Gurren Lagann has a little bit of everything - action, comedy, drama, mechas...

Not as popular/highly rated but I've enjoyed (comedy/adventures): Saiyuki or Ranma 1/2.
