Those are some pretty damn good choices (apart from maybe Tokyo Ghoul...). Be sure to tell me what you think when you watch them!
I've also got exams coming up in late may/early june. Gotta start revising which means I do have to cut back in the amount of anime I watch sadly. To reward myself though, straight after my exams finish I will start watching HxH (which will be a huuuuge relief).
As for Manga, the Bleach manga is good and all but the anime is pretty much the same quality so there is no real need to read it (Especially when you have watched 366 episodes already...) Though don't give up on manga, try reading Berserk. Even if you watch the anime, start from the very beginning and don't skip the bits you've already seen. I guarantee you will be hooked. It is even better than FMA, that can tell you already how good it is.
Another Manga suggestion is Claymore as it continues from where the anime cut short and I've heard is a pretty damn good manga. Same with Soul Eater and Tokyo Ghoul.

Fullmetal Alchemist the original (I've just started watching it, so far it is just as good as brotherhood)
Higurashi (10/10) (also don't be turned off by Umineko koro ni as that spin-off sucks but this show is god-tier)

The Disappearance of Haruhi Suzumiya (10/10)
*One Punch Man (9/10)
*Berserk (9/10) (the manga 10/10 is legitamately better than FMA so don't forget to read it)
*Tengen Toppa Gurren Lagann (9/10)
*Toradora (9/10)
Haikyuu!! (9/10)
Trigun (9/10)
Neon Genesis Evangelion (9/10)
Mirai Nikki (8/10)
*Kill la Kill (8 or 9/10, I need to rewatch to revaluate my thoughts on it)

Out of all the stuff I mentioned and on your want to watch list, which ones are you most keen on? I've just started watching the original FMA and it still holds up even compared to Brotherhood imo. I'm also trying to watch more Bleach and trying more anime airing this season. Which is fun, but also hard with school breathing down my neck.
My favourite anime show of all time (coincidentally) is Fullmetal Alchemist Brotherhood; Code Geass comes in at second place oddly enough. I absolutely adore both of them. They are both honest to god masterpieces. I like Brotherhood more as it has no real flaws (literal perfection) while Code Geass does (few and far between but still). Also, Brotherhood is more concise and structured as it doesn't have that awkward time skip Code Geass has to bridge two seasons.
What did you think of Steins;Gate and HxH? I haven't seen them but they have been recommended to me a multiple of times and are critically acclaimed to the same standard as Brotherhood and Geass.
