I haven't yet actually read much of the FMA manga... I heard that Brotherhood follows it so closely that I put off reading the manga, as what I had read was already covered in the first (original) FMA series. There wasn't much in the manga that was mandatory manga-only stuff, storyline or artwork...
So, my recommendation (based on only having read the first volumes of manga) is see the two anime, and if you love it and can't get enough, read the manga. Otherwise, Brotherhood anime gives you the manga in anime form, and doesn't deviate so much as to make reading the manga mandatory. (Whereas, just seeing the original anime WOULD make reading the manga mandatory.)
I like your Honey and Mori avatar! Since you've seen and enjoyed Ouran HS, I am going to recommend the anime I saw right after I saw that one, that I really enjoyed: Lovely Complex (it's on your Want to Watch list). Cute and funny romantic comedy!
Also, I see that you are watching Fullmetal Alchemist now. What do you think of it?
My quick thought on these: Fullmetal Alchemist and Fullmetal Alchemist: Brotherhood
One of my favorite viewing experiences. They were creating the first series, FMA, while the manga was still being written so while the first part of the series is very similar to the manga, the middle and ending are quite different. Second series, Brotherhood, was created after the manga series was completed and follows the manga storyline much more closely. However, a lot of the first part of the story was more thoroughly covered in the first series. I recommend seeing them both, in chronological order.
