It´s noy only about the plot, but the dream of each character.
For example: Zoro wants to become the strongest swordsman and Luffy wants to become king of the pirates.

Remenber they dig in deep the story of each character and along the way thers´s some fillers, for example, they show why Zoro is called "The Pirate Hunter".
And in each island they stop they spend like 10 to 15 episodes in that island.
