Heh, if I have to pick what I like about Spice and Wolf the most, than I guess it would be "charming mood". In general I'm a big fan of slow-paced, slice of life animes (hence quite a few of them in my top list) and if it also happens to have some light romance, than it's perfect treat. The pleasure of watching this type of animes is not in exciting and unpredictable story, breathtaking action or tearjerking drama - it hides in enjoying very simple scenes, with captivating mood. In case of Spice and Wolf I guess it would be a little conversations between main characters and the overall setting of the world (nice medieval theme, interesting side characters, a little bit of simple economics ).

I am not sure I should reccommend it to you though. From what I've seen in your top anime list, you prefer anime with fast pacing, so it might be a bit boring for you ( I have no idea about the pace of Gankutsou, Glass Fleet, Tenchi in Tokyo and Whisper of the Heart, since I haven't seen even one ep of them, but the rest of your list is defienietly fast-paced, plot-twisting and action-packed bunch ).However if you think that you like slow shows as much as the fast ones, than yeah - Spice and Wolf is defienietly worth the time.

Hope that helps ^^'

Thanks for the comment, I'm glad you agree with me ;]

And seeing as they  make it 1 chapter->1 episode, I think we can safely assume that they will just make Kimi ni Todoke into a 26 episode series with open ending ( similarly to what Ouran Host Club or Yamanade did ). So I don't think there's reason to worry, that they will spoil KnT with some half-assed ending (at least I hope so).
