I'm glad to see you figured it out ^-^

First you need to make an anime list! ^-^ To make your list, you need to go to an anime's page and mark it's status using one of the options. You can do this by either using the search to look up the anime you've seen one by one, or look through this master list: http://www.anime-planet.com/anime/all

If you're using the master list, there is a little drop down menu in the "status" column. If you look on an anime's page, the drop down list is found right under the description. The drop down list gives you a few options: Watched (If you've seen all of the show), Watching (you're watching the show right now), Stalled (You started the show, but will only finish it some day), or Dropped (You started this show but never plan on finishing it).

By marking a show, and marking the amount of episodes you've seen, it gets added to your own personal anime list. For example, here is mine: http://www.anime-planet.com/users/Kari5/anime It also adds up the actual amount of time you've spent watching anime which can be seen on the "my life on anime bar" on your profile. (for example, for every episode you've seen, another 23 minutes will get added)

Now to answer your question :p When you set an anime as "watching", it will appear on your signature automatically. That was a lot of text so if you find it confusing, just ask ^-^;
