I was one of those left completely clueless about the last two episodes until I looked online and realized what they were doing there.
I can respect the symbolism and stuff, but I'm not one of those people who thought NGE was so overly amazing because of that. The biggest factor to get me into an anime is if it's entertaining, and this was at some parts, but wasn't at others.

It has pacing issues but it definately deserves most of its fame. It changed the way mecha anime were made afterwards.

I hate this show with a passion.

It's just another one of those Gundam things, only it pretends to have a deeper meaning. It doesn't, it's shallow and it's rushed. I know the animation company was rushed, but it shows and it makes this series suck even more.
This thing is full of plotholes and questions that are never answered.
I hate myself for watching it all the way through and I don't understand why anyone would defend this thing.

I am pretty sure both NGE and Gundam shows have meanings that are in all very deep. Unless of course you can name a show with a subject that is more deep than war, evolution, and mental isolation and an overall better presentation. I can't think of many. And what do you mean by rushed when both have very slow mid episodes?

It depends on what you mean by plot holes and answers. It gives you answers but never elaborates on them much in-series.

Opposite, they actually encouraged him to make more, so they finally settled with EoE. (Hideki Anno was satisfied with series only, capitalism found its way into him later)

I'm not saying I dispise people that do like this show, I'm just saying I don't like it. If you like it, good for you rejoyce in you fanboy-ism. I'm happy for you.
