Okay, to clarify, one-shots are one chapter mangas, NOT one volume mangas (Hoshi no Koe is NOT a one shot, but a 1 VOLUME manga). Here we go.

(Oh yeah, I'm not going to give a brief about it because they are short enough it might spoil it. And I'm lazy.)

the Labyrinth Cat was a fun little oneshot from the artist of Mushishi, Yuki Urushibara. I really liked Sketch from the artist of Blue Drop as well, which was yuritabulous with 'cannibalistic overtones' XD. Also all the Milk Morinaga oneshots. There was also one seriously good one shot in some Hayate volume with time-traveling. Uh, I'll think of more.

Forever Honey - adorable and beautiful art (from one of my favorite mangakas)
Emerald - the summary on manga updates doesn't do it justice.
Past Day Present - this kind of like the readers digest version of Mekakushi no Kuni (it's actually unrelated to that series but the themes are really similar)

I love this one-shot made by Hiase Iwaoka named White Clouds
It's sooooooo cute, it makes my heart fill fuzzy and I cry... really nice but sad story...

I liked I.O.N and Kimi wa girlfriend. Both are Shojo one shots.

Nop, they are actualy mangas of one volume. A oneshot is a manga not much longer than a chapter.

I like Kaori Yuki's oneshots. My favorites are: Kaine, 0 no Soukoushi, Die and Psycho knocker.

Some realy nice shoujo oneshots that I recomand are: 1/3 no Kareshi and Jun'ai Koza Kemono Suyou.

Well i think this is against the regulations as its three chapters... but 7th Period is a Secret I found was realy fantastic and sucked me right in!

im not sure if this one counts either but there was a short in the back of the GYO volume 2 manga called "the enigma of amigara fault". the ironic part it this 30 pg short is better than both volumes of GYO together.

just to be clear, a "one shot" is like a 1 chapter manga and not just 1 manga book.

Stray Dog by Hiromu Arakawa. Might not be for everyone, but I enjoyed it.
