I would like to sort my "Want to watch" list by average rating, similar to how you would be able to by genre search.

You can do a similar thing using advance search filters when searching the anime database:

Browse Anime by Title: ALL - Anime-Planet

which is almost the same thing. Although I understand what you mean by not being able to do so in the list.
